Per fer la crema pastissera posem a bullir la llet amb la pell de llimona i la branca de canyella, que infusioni.
Barrejar els rovells amb el sucre i la Maizena. Afegir la llet calenta, barrejar molt bé i portar al foc fins que espesseixi. Batre molt i canviar de recipient. Deixar refredar per omplir la coca.
Estendre la pasta de full en forma de rectangle i omplir amb la crema pastissera freda. Cobrir amb un rectangle de pasta d'igual tamany. Segellar pels costats.
Cubrir amb els pinyons que previament hem humitejat. Ensucrar per sobre de forma abundant.
Coure al forn a uns 180ºC durant uns 30 minuts, a la part de baix del forn.
